ThUrSdAy ReCiPe...SaLmOn CaKeS

{Pre cooked}
Lately I've been trying so many recipes, my bf has actually asked me where the "weekday" dinners have gone...My excuse: There are so many good looking food blogs and books that I've gone a little overboard..A little...Here is a pretty easy recipe to whip up, pair it with your favourite wine and a crisp salad for these hot Summer months. 


You will need:


1/2 Pound Salmon
Salt & Pepper
Olive Oil
3 Celery stalks, diced (really small)
1 Red bell pepper, diced (really small)
1 Red onion, also diced (Really small)
1 Garlic Clove, minced
1/4 Cup of Parsley, preferably fresh
1 Cup bread crumbs (I always use Panko) 
2 Eggs, lightly beaten 


Here's what you'll do:


1. Bake your salmon in the oven at 350 degrees for 15 minutes.
2. Once your salmon is totally cooled down, remove skin and flake it with a fork. Transfer to bowl.
3. In a large skillet, heat olive oil and add: celery, pepper, onion, garlic, parsley, salt and pepper. Sautee until tender (10 minutes)
4. Let your veggies cool down then add the mix to your flaked salmon. 
5. Add your 2 eggs and bread crumb to your salmon and veggies. Mix.
6. Make patties (as you would with hamburgers), place on a baking sheet and refrigerate for 30 minutes.
7. Cook salmon patties in skillet, 3 minutes on each side and Voila! 


With these cakes I also made an artichoke tartar sauce and it honestly makes the dish. All you need to do is mix the following ingredients and top your salmon cakes:

1 jar of marinated artichoke hearts, drained and chopped
1/2 mayo
1 tablespoon capers
1 tablespoon lemon juice
1 teaspoon dijon mustard
