ShRiMp ToRtILLaS...


With the heat we’ve been having and Vancouverites not believing much in the power of A.C., I’m trying to step away from the stove and prepare unfussy dinners. This pancake/tortillas/Not too sure what to call it just takes 5 minutes to cook and voila!

You will need:
½ Cup Garbanzo Bean Flour
½ Cup of Regular Flour
½ Tablespoon Baking Powder
Salt and Pepper
1 Cup of Water
1/3 cup of Scallions
2 Tablespoons of Cilantro
½ Cup shrimp, scallops chopped up

Here’s what you’ll do:
1.       Mix garbanzo flour, regular flour, baking powder, salt and pepper.
2.       Slowly add your cup of water. (It will resemble pancake batter)
3.       Add scallions, cilantro and sea food and fold in.
4.       Heat oil in your skillet,  pour mixture in (Make sure to not make it too thick)
5.       Cook 2.5 minutes one side and flip over for another 2.5 minutes or until rims are darkened. 


For a little kick, whip up greek yogurt (I use that as a substitute to sour cream) with lemon zest, salt and top off your tortilla.
